What’s for dinner?

My kids just asked me the dreaded question.  “What’s for dinner?”.   Did you know these people except dinner every night? Every of the nights?  If you’re like me, you struggle at times coming up with new recipes.  Given the times, I gathered a few, inexpensive, easy to make recipes to share with you.  Hopefully these will help make your life a little easier!

Pour Man’s Veggie Soup from Anna Catron

 V8 (store brand)
Frozen Soup Veggies
Frozen Okra
Few Spices

Throw it all together and cook until warm.  Serve with grilled cheese or by itself.

Cheese Enchiladas  from Anna Catron

Enchilada Sauce
Cream of Mushroom
Tortillas
Shredded Cheese

Mix enchilada sauce and cream of mushroom.  Fill the tortillas with cheese and sauce mixture.  Bake 350 degrees for 15-20 min

Pork Chops with Potatoes from Rebecca Faulkner

Pork Chops
Cream of Mushroom 
Potatoes

Brown pork chops on both sides, cut potatoes in half place in skillet.  Pour cream of mushroom over chops and potatoes.  Cover and simmer for 30 minutes. 

Crockpot Potato Soup  from Emily Stephens

Bag of hash browns
Box of Chicken Stock
Cream of Chicken
Salt & Pepper 
Tsp Onion Powder
Cream Cheese

Combine all ingredients in crockpot, cook on low all day, 30 minutes before serving melt in a block of cream cheese.  Whisk until smooth. Serve with bread, salad, top with your choice of toppings, bacon, sour cream, cheese, spices.

Ranch Chicken Casserole from Whitney Cline

Ranch
1 Chicken Breast
Rotini Noodles
Shredded Cheese

Cook Rotini noodles according to the directions on the box.  Cut up chicken (I precook the chicken) combine desired amount of ranch, chicken, and noodles in a casserole dish.  Top with shredded cheese, 375 degrees 15 min. 

Pasta Sauce with Noodles  from Olga Romero

Pasta of your choice
Ground Turkey (or beef your preference)
Onion
Garlic Powder
2 jars of pasta sauce
Can of diced tomatoes

Saute Onion, add ground turkey cook until no longer pink.  Add pasta sauce, diced tomatoes, and garlic powder, cover with lid, lower the heat, simmer for 10 minutes.  Pair with your favorite pasta. 

Cheesy Hash brown Casserole  from Rosemary Cline

Frozen bag shredded hash browns defrosted
Brick of Cream Cheese
Cup of Mayo
Can of Cheddar Cheese Soup
16 oz shredded cheese
Tbsp of mustard
1 egg
Ground meat of your choice
Chili Powder
Minced Garlic
Onion Powder

Brown meat, season with minced garlic, chili powder, 1/2 tsp onion powder, salt and pepper to taste.  In a large bowl mix cream cheese, mayo, mustard, soup, and egg until well blended, add hash browns, meat, and half bag of cheese.  Pour mixture into a greased dish, top with remaining cheese.  Cook 350 degrees for 20-25 minutes. 

Apple sauce from Whitney Cline

8 apples
1/2 cup sugar
1 1/2 cups water
TSP cinnamon

Peel, core, dice apples, place in pot on stove, add all ingredients to the pan.  Simmer 20-30 minutes.  Mash, enjoy warm or cold.

Chicken Spaghetti from Whitney Cline

8 oz cream cheese
Cream of Chicken
8 oz spaghetti cooked
Chicken Breast cooked
Shredded Cheese
Garlic Powder
Red Pepper Flakes

Combine all ingredients cook 350 degrees for 30 minutes.

Taco Pasta from Whitney Cline

Ground meat (turkey or beef)
Jar of your favorite salsa
Farfalle pasta
Can of Corn
Taco seasoning
Shredded cheese

Brown meat, add in salsa, corn, and taco seasoning.  Cook pasta according to the directions on the box.  Fold in the noodles to the meat mixture, top with shredded cheese.  Enjoy.
